If you've ever ordered a tandoori platter, you've tasted one of the most recognisable styles of Indian cooking. At Moj Masti Lounge + Bar in Surrey, the tandoor is a highlight of our kitchen, and here's what makes food from the tandoor so special.
What is a tandoor?
A tandoor is a traditional clay oven, usually shaped like a deep cylinder and heated to very high temperatures. Food is cooked on skewers lowered into the oven, or breads are pressed against its hot walls. The result is a smoky char and a tender, juicy interior that's hard to copy in a home oven.
Why the flavour is different
The intense, dry heat sears the outside of the food quickly while keeping the inside moist. The clay holds heat evenly, and a touch of smoke from the fire adds depth. Together, this gives tandoori food its signature taste and slightly blistered look.
The role of the marinade
Tandoori dishes are traditionally marinated before cooking, often in yogurt and a blend of spices. The yogurt helps tenderize meat and vegetables, and the spices build flavour. Longer marination usually means deeper taste, which is why good tandoori takes time and care.
What gets cooked in a tandoor
A wide range of foods can go in the tandoor, including marinated meats, vegetables, paneer and fresh breads. Skewered items come out charred at the edges and tender in the middle. Our Tandoori Platter is a great way to sample several items in one go, and you can see what's available on our menu.
Tandoor breads
Naan and other breads are often baked on the inside walls of the tandoor. They puff up and pick up light char marks within minutes. Fresh bread straight from the oven is perfect for scooping up curries and sauces.
Tandoori for vegetarians
Tandoori isn't only for meat eaters. Vegetables and paneer take beautifully to marinades and high heat, giving you smoky, flavourful options. We offer plenty of vegetarian dishes and can accommodate vegan and gluten-free requests, so tell your server about any needs and they'll guide you.
How to enjoy tandoori at a buffet
At our buffet, grab a few tandoori pieces first while you explore the rest of the spread. Pair them with rice, bread and a cooling side to balance the spices. Our lunch buffet is $20.50 per adult and our dinner buffet is $23.50 per adult.
