North vs South Indian Food: What's the Difference?

By Moj Masti Lounge + Bar · Published 2026-10-20

"Indian food" covers a huge range of regional cooking, and one common way to describe it is by splitting it into North and South. At Moj Masti Lounge + Bar in Surrey, our cooking leans toward North Indian flavours. Here's how North and South Indian cuisines compare.

A very big country

India has many regions, each with its own ingredients, traditions and techniques. North versus South is a simplification, but it's a useful starting point for understanding what you see on a menu.

Staple foods

In the north, wheat-based breads such as naan and roti are common, along with rice. In the south, rice takes centre stage and appears in many forms, from plain steamed rice to fermented batters used for pancakes and dumplings.

Cooking style

North Indian cooking often features rich, slow-cooked gravies, dairy such as yogurt, cream and paneer, and the clay-oven cooking known as tandoori. South Indian cooking commonly uses coconut, curry leaves, mustard seeds and tamarind, giving dishes a lighter, tangier character.

Spices and flavour

Both regions use spices generously, but the combinations differ. Northern dishes often lean on warm spices and aromatics, while southern dishes may highlight sourness, freshness and heat from chillies. Neither is better, just different.

Typical dishes

You might associate the north with tandoori platters, creamy curries and fresh bread. The south is known for rice-based dishes, lentil stews and crisp savoury pancakes. A restaurant's menu usually tells you which style it focuses on.
